THE PATTY • 1 cup green lentils • 1 cup chickpeas, drained + rinsed • 1 cup red pepper, chopped • 1 cup red onion, chopped • ¾ cup scallions, chopped • 1 clove garlic • 2 cups vegetable stock • 2 tbsp fresh dill • Salt + pepper to taste
1. Add 1 cup green lentils to medium sized pot and add 2 cups of vegetable stock • Cook on medium heat for 25-30 mins 2. Add lentils and all other ingredients to food processor and process • Leave consistency chunky 3. Remove from processor and add to large mixing bowl • Combine throughly 4. Shape burgers using a ¼ measuring cup 5. Line baking tray with 12 mini patties 6. Bake on 400 degrees for 20 minutes • Flip on tray after 10 minutes
PREPARING THE SLIDERS • 12 mini pretzel buns • Romaine lettuce • Tomato, thinly sliced • Avocado, thinly sliced • Yellow mustard (organic)
1. Toast buns at 350 degrees for 5 minutes or until golden brown 2. Assemble burger with toppings 3. Enjoy!
