So if you read the manga, and finished it, you would know that after they begin that pillar training to get their marks, Giyuu Tomioka became less stoic and much, much more open to feelings.

He wanted to make Sanemi some Onagi, and will protect Tanjiro and everyone no matter what.  He also shows more emotion.

We find out that Giyuu actually had a sister who was killed by a demon to protect him the day before her wedding.

She was gentle, courageous, and loving.  I think that Giyuu would actually like an s/o to be like her.  Not as a replacement, but because she was like a role model to him, and he loved her very much.

 So would anyone like me to write a story about how Giyuu meets a girl around his age who owns a wisteria house, and she is not only gentle, loving, and courageous, but she also is really smart.  She knows how to treat wounds and can treat herself.  She was actually inspired by Shinobu, who taught her how to make poisons and medicines when she had come over to take a break.  After they defeat Muzan, Giyuu comes back to the Wisteria House, which she has turned into a small clinic, to stay with her because he has no home.  

But seriously.  He would totally fall in love with a Wisteria House owner if they remind him of his sister.
